Hello Carl,

from the application scenario that you mention I would consider the 
ethernet / ethernet-2-serial combination as overkill (at least from my 
point of view, I'm nevertheless not sure about what these devices cost, 
how large they are and what additional software problems you might have).

I guess you could alternatively go with a uController based solution. 
Either you design that one on your own (there are e.g. ATMEL AVR 
controlers with 2 UARTS + you can combine these via their other I/O lines) 
or you consider using a number of e.g. Basicx "miniboards".

These are based on ATMEL uControlers, can be programmed in a 
BASIC dialect (with a fast run-time available) and can easily be combined 
in kind of network where multiple controlers share kind of a "message 
bus". The operating system on the devices takes care of bus arbitration.
=> there's a very active mailing list and lots of example applications.

Additionally - if you can control your serial data sources (with CTS/RTS) 
=> so that you can decide when they send - you may have a chance to do a 
"time multiplex" on the input lines (so that your system works in 
synchronous instead of a purely asynchronous way).
